One of the great things about living is Provo is that I am so close to my grandma. This year, living close to my grandma means that we are also close to lots and lots of apples!!!
Andrew kindly picked a bunch for us while my wrist was still having troubles. We’ve got three large bags that we are working our way through and thoroughly enjoying every bite.
But yesterday we joined my grandma in the amazing feat of making and canning apple pie filling! We started just before 2 pm. I had one small basket that I was working from…I cannot even count how many times that basket was refilled by the bucketful from the garage. It felt like we went through over 100 apples. That may or may not be an exaggeration…we will never know.
We had great equipment and I started off with the apple peeler, corer, and slicer with great enthusiasm. Grandma did the long job of stirring the pot of the liquid part of the filling so that it didn’t scorch. After one and a half hours the liquid was thickened and ready to go, and I figured that I had plenty of apples to fill the jars.
Nope! Barely two jars were filled with all my work. So Andrew joined in and we made an assembly line to get all 13 jars filled and pressure cooked. It took another two or so hours, but it felt good when we finished! There is nothing like canning apples with fabulous company to enjoy the fall season!

Oh well, I guess this is a more edible story.
